PERFECT VEGGIE GRILLED CHEESE SANDWICH USING UDI'S GLUTEN FREE BREAD + HORIZON ORGANIC CHEESE!


In honor of National Grilled Cheese Month (yep…that’s actually a real thing!), Udi Gluten Free Foods partnering with Horizon Organic on a Grilled Cheese Recipe challenge with a select group of top food bloggers and chefs.
Grilled Cheese may sound simple, but there are thousands of creative ways to make the perfect grilled cheese for breakfast, lunch and even dessert! I used Udi's Gluten Free White Bread and Horizon Organic Mexican Shredded Cheese as my main choice of ingredients!

Ingredients used:
Udi's Gluten Free White Bread
Horizon Organic Mexican Shredded Cheese
Organic Spinach
Baby red, orange and yellow peppers
Onion
Butter


Sauteed the onions and peppers

 Buttered the bread placed in the pan to grill butter face down
 Added cheese on the side un-buttered

  
Added sauteed peppers and onions on top of the cheese

Added cooked spinach to top of cheese
 Then another layer of cheese on top of the spinach, then buttered another piece of bread, butter side facing up on top of the sandwich.
 Cook until crispy

This was SOOOOOOOOOOOOO delicious!
