APPLE TOWER SANDWICHES (RECIPE)

A healthier alternative than bread --- apples!

I cored apples

Then I used natural peanut butter (or you can use almond butter) in between the apple layers (works like "glue" to hold it together)

In between the layers I added baby carrots
 Sliced strawberries
 Fresh spinach leaves
In the end it looked like this once all stacked up, with all the layers with the apple slices in between and the top apple at the top and the bottom apple at the bottom.
My kids loved this, we call them apple tower sandwiches. My kids had fun taking it all apart and eating it, they got fruit and veggies in a healthy packed lunch!
