I am totally trying to change my children's diet with more fruits and veggies since my daughter was diagnosed with an immature immune system and after reading that sugar suppresses the immune system. So I am on a journey to find healthier options for my children and in doing so I have had to get creative for them to eat what I have made!
I used orange and green peppers to make a flower. It was easy to do because if you cut the pepper sideways it creates a circle type design which is the top of the flower. Then with the green peppers I made the flower stem and leaves. In the center of the flower is humus which they use for dipping their veggies in!
Then using an yellow pepper, humus, seedless cucumber, grapes and a baby carrot I made veggie faces. I used the humus to keep the face intact and for dipping the veggies in.

I don't have any pinterest links but I add extra veggies to our dinners. Tonight we're having lasagna that has mushrooms and chunks of zucchini and yellow squash mixed right in. I also added two jars of baby carrots to the spaghetti sauce. We have tons of jarred baby food left that my youngest never used. lol I add baby carrots to my chili as well. I'm fortunate that my kids generally devour their fruits and veggies so I haven't really ever had to be too creative (the creativity is mostly for me lol).

ReplyDeleteA friend gifted me last year with "Deceptively Delicious," by Jessica Seinfeld (wife of Jerry & mother of 3) - it is *fantastic*! She touts the idea of pureeing fresh vegetables and "hiding" servings of vegetables in tasty, kid-friendly dishes like mac & cheese. I highly recommend it :-)

ReplyDeleteI dont have any pinterest links for this but love what you did! I guess I have been lucky in the fact my kids never complain when it comes to eatting their fruits and veggies. Now getting my son to eat something other then mac & cheese or chicken nuggets is another story lol

ReplyDeleteI'm not sure my kiddos would eat the peppers or humus but i truly love your creative plates. Some kids eat with their eyes (you know what i mean) and by making their plates cater to their imagination is a great way to interest them as to what is on the plate. I'll have to try it out myself.

As we deal with food allergies in my house, plus toddler eating, I've now started to add a teaspoon or so of flax seed for that extra nutrition into things like oatmeal...my little guy doesn't even notice! Do you make y our own hummus? I've struggled to--would love tips if you do?? (post idea??) :)

that is just cool! I could never get my kids to eat the peppers, but the humus and fruits they will eat. But that just looks so much fun!
