HOMEMADE LENTIL SOUP RECIPE IN THE CROCK POT




Life is busy, I love my crock pot but I do not use it as I should. Recently I decided to pull it out and make a large batch of lentil soup. This recipe can be tweaked to your liking. Here is how I made ours:



Ingredients:
2 bags of dried lentils
2 carton's of .32 oz chicken broth
1 red pepper
3 large carrots
4 cloves of garlic
2 stalks of celery
1 whole onion
Brown Rice (2 cups)
A dash of salt & pepper


Dice up the pepper, onion, carrot, garlic and celery and place in the crock pot. 


Then add the dry lentils and chicken broth to the crock pot.


Cook on low for about 6 hours on medium and then 2 hours on low. 

 Easy right! You can modify this soup if you are a vegetarian and use vegetable stock instead of chicken broth and then it would be vegan.

Serve with a few whole wheat crackers and then you have a healthy meal with vegetables and protein! 

Plus since I made a lot this was dinner for all 6 of use for 2 nights plus lunch one day for my husband and I! And it was very inexpensive to make!

  3. I love making meals using my crock pot. My kids can be crazy around supper time and if I can focus on them instead of cooking it makes the whole evening a little smoother:) Thanks for the recipe, I'll have to try it!

  18. Oh, this sounds yummy! We just got a larger (like double the size of our old one) crock pot for Christmas, and I plan to use it at least once a week. We have pot roast ready for it tomorrow!
