FRESH SUNSHINE SWEET CORN IN MY CORN CHOWDER CROCK POT RECIPE

My younger kids are picky eaters. I try to get them to eat vegetables but getting them to eat corn is not a difficult task. There is nothing better than eating nice fresh crisp sweet corn.  Our family looks forward to Spring where corn is in season here in Florida. I am thankful to be a native Floridian experiencing this delicious vegetable year after year! Fresh Sunshine Sweet Corn offers a delicious sweet taste, packed with Vitamin C and fiber!


Florida farmers plant a larger crop during the fall and winter, which offers consumers the opportunity to eat corn on the cob year round - with a peak season in the spring. Speaking of recipes, I recently made my family homemade Corn Chowder in my crock pot. Using all fresh ingredients including corn cut directly off the ear!
 
  

Ingredients:
2.5 lbs of Fresh Corn on the Cobb
2 Celery Stalks
4 Smaller Size Red Potatoes Peeled 
1 Cup of 1/2 and 1/2
6 Cloves of Garlic
1 Large Vidalia Onion
2 14.5 oz. Cans of Chicken Broth (you can use vegetable broth instead)
Salt and Pepper to your taste 
1 Tablespoon of Basil

First dice up the onion, garlic, celery and potatoes. Then take the corn on the cob and slice off all the corn using a sharp knife. Add it all to the crock pot. Next add the chicken broth and 1/2 and 1/2. Then add your salt, pepper and basil. Cook in your crock pot for 4 hours on high and then adjust your crock pot setting to low for 3 more hours. When done you will have delicious corn chowder!



The star ingredient, corn will be super tender leaving the corn chowder sweet and comforting. Our family had this for dinner along with a side salad, french bread and fresh fruit. 


The possibilities are endless using corn as a main ingredient or even a side ingredient! Corn bread, salsa, add to your salad or an omelet! Corn is great for anytime of the day including dessert!
