We had mother's night out last night and each of us brought a little something to eat for all of us to share while us mom's gathered for fellowship and to games. I wanted to make something different with very little preparation. Pinterest I find is an awesome place to find delicious recipes. I decided to make these.
I am giving it a different name: 4 Ingredient DIY Thin Mint Cookies
Ingredients:
2 cups semi-chocolate chips
2 tablespoons of vegetable Shortening
Crackers (I used whole wheat salted crackers)
3/4 teaspoon of pure peppermint extract
I doubled my batch which made a total of 48 mint cookies. If the batch is not doubled it will make approximately 1 1/2 dozen cookies.
Take the semi-chocolate chips and vegetable shortening and melt them in a microwave safe bowl for 1 minute. Then stir, if not fully melted then microwave for another 15 seconds.
Once the chocolate is fully melted add your peppermint extract and mix. Make sure you taste your mixture, if you prefer to have more pepperminty taste then add a bit more extract. Then dip the crackers in the chocolate. I used a fork which to dip the cracker in and then gently gave the fork a shake getting the access chocolate off the cracker. Then I added to my silicone baking sheet but if you do not have that then you can use parchment paper.
If the chocolate mixture starts to firm while dipping then place back in the microwave for another 15 seconds. Once the all the crackers are dipped in chocolate then refrigerate the crackers so the chocolate firms up.
I love the Girl Scout Thin Mint cookies and even though crackers are the base of this recipe they taste just like or even better than the Girl Scout Thin Mint's which are so ridiculously priced and not affordable for my family.

ReplyDeleteThese are similar to the ones we make at christmas. We put peanut butter in the middle of two crackers and dip in white chocolate. I never thought about adding mint. Thanks for this great idea!

ReplyDeleteThe only way I can justify buying thin mints is because the money goes to the Girl Scouts. However, I do agree that even a family of our size can decimate a box in one day. This is a great way to get that taste any time of the year.
